Cookie in a Mug - Scouting from Home

This week our Scouts made a Chocolate Peanut Butter Cookie in a Mug. It was so good that we wanted to share the recipe, so you can make it again.

INGREDIENTS

  • 1 tablespoon butter

  • 2 teaspoons crunchy peanut butter

  • Pinch salt

  • 2 tablespoons soft brown sugar

  • 1 teaspoon milk

  • 1/4 teaspoon vanilla extract

  • 1 egg yolk

  • 3 tablespoons plain flour

  • 2 tablespoons dark or milk chocolate / chips

INSTRUCTIONS

  1. Put the butter and peanut butter in the bottom of a 300ml ½ pint microwavable mug. Microwave on high for 30 seconds, then remove and stir the mixture until completely melted.

  2. Stir in the sugar, salt, vanilla extract, egg yolk and milk, then add the plain flour and stir well until the mixture is well combined.

  3. Add the chocolate chips and mix until the chips are evenly distributed. Flatten the top with the back of a spoon.

  4. Microwave on high for 40-50 seconds, until the dough is just cooked. Allow it to stand for 1 minute so that the cookie continues cooking.

Best eaten warm with a scoop of ice cream… Yum.

Cubs - Shere Khan's International Challenge 1

Hi All, hope you’re all safe and well.

I have some challenges for the coming weeks. With supervision from your grown ups, make contact with someone internationally.

The whole world is sharing the challenge of life being very different for a while and trying to keep safe, positive and keep each other safe. People from all over are making appeals to communicate and show solidarity despite distance.

Get an adult to help you email, message, comment, write a letter, record a video, phone call or voice message to someone from another country. Bonus would be if it’s other members of our Worldwide Scouting community.

The best way to do this is through next week’s special edition Jota/Joti Jamboree on line. Check it out by clicking here.

It would be great if any Cubs can have a go at this challenge and post any pictures on our Facebook page.

We have received some of your badge-work for the Home Help Activity Badge set last week. You still have a couple of weeks to complete this and send your pictures to me. Thanks Akela.

Scouts - Librarian Badge: 31/03/2020
